Utrechtse Sprits


Utrecht se Spritz cookies
160 g. Butter(1 1/2 stick)
100 g. Sugar (1/2 cup)
200 g. Flour ( 1/1/2 cup)
1 egg
aroma, pinch of salt
lemon juice, rind

In a mixer, THERMOMIX or Kitchenaid, beat butter and sugar, add egg, other ingredients and at last mix in the flour. Fill a cookie press and shape cookies.
Bake in moderate oven 8- 12 minutes 350 F.
Let cookies cool on a rack and store in metal tins for freshness.

My hand made European cookies are part of my life. Ever since I was a kid we use to create cookies for many family birthdays. They are a favorite and traditional holiday present from our home to our friends. Enjoyed with a cup of tea we savour life's joys. Wherever I go I bring some cookies as a welcome gift and sharing. The cookie lady is one of my nicknames. People remember and often ask me over and over again if I have cookies. Many a cookie slip into the office to brighten up the long working hours of the staff.
I had a marathon project in 2000 baking extra 125 tins of 50 cookies each for the New York Philharmonic Orchestra as a holiday present from the past conductor, Kurt Masur. My two kitchen helpers were my life savers to complete the task within 7 days. It was fun baking large quantities with small batches of making dough. At the end of the baking season I have a lot of short cuts that I have to remember when the baking season starts again.

This week's we remembered our wedding anniversary at Ocean Beach, Long Island, enjoying dinner on the ocean at at the Hide away restaurant (Taste of Fire Island). These cookies were party favors for the ladies, decoratively packed in pairs of 2, tied with a red ribbon.

On our trip to the Netherlands in Utrecht last year we enjoyed a cup of Dutch chocolate or coffee with these famous cookies at Patisserie/Chocolaterie:
